Gluten free Quinoa & Oat bread for your bread machine



1 Tbsp. Dry active yeast

2  cups "Gluten Free All Purpose Flour Mix "
1/2 cup almond meal
2 tsp. xanthan gum
1 tsp. salt
2  Tbsp. unsweetened cocoa powder
1/4 cup  Raw sugar
1/4 cup steel cut oats
1/4 cup whole Quinoa

1 ½ cup water Or milk (105 degrees or a little less than hot)
3 eggs (or 9 Tbsp. water and 3 Tbsp. ground flax seed)
1 ½ Tbsp. oil
1 tsp. cider vinegar
1 Tbsp. Sorghum Molasses or Honey

1. Start to heat your water or milk

2. In a third bowl, whisk the eggs, oil and vinegar until the eggs are a bit frothy. Once your water or
    Milk is to temp add together.

3. Combine dry ingredients in a large bowl and mix together with a whisk.

4. Oil the paddle to your bread machine pan to help when you’re ready to remove it.

5. For my bread machine I added all the wet ingredients to the bottom of the pan, then my dry ingredients    on top

6. As for your yeast I make an indentation in the dry ingredient layer on top and put my yeast in that indentation. I suggest using your yeast however the manufacturer of your bread machine’s company calls for.

Notes:
  • All the flours I used are from Bob’s Red Mill
  • When your machine is done kneading, with wet hands, remove the paddle and add a toping like whole grain oat meal or sesame seeds.
  • You don’t have to use the almond meal just sub it for more GF all purpose flour.
  • You don’t have to use the quinoa or oat meal and you don’t have to sub for them either but I do suggest using one or the other so your bread doesn't come out wet.
