Usana Health Sciences

Usana Health Sciences has a line of gluten free products as well as there Vitamins. I have been on the vitamins for three years and tried all the products. I lost 30 pounds in the first three months and Usana has changed my life and health habits forever. Here is my review on the products.

Peanut Butter Crunch Bar

I’m sorry for those of you that can't eat peanuts, don't worry I found something for you too.

But of course it's Gluten free!

This nutritious bar saved my life when I went to work on my lunch break. I used to work as a server in a few restaurants and after looking at food all day the last thing I want to do is eat, and it’s especially annoying to be serving food that I can’t eat. So for my break I would eat one of these protein bars, my vitamins, and several glasses of water. After that I had enough energy to get me through the next few hours of work and go home and have dinner. It worked and I had no crash.

Cook Book and Flours

For the past few months I've been experimenting with this cook book,"Gluten-Free Quick and easy," by carol Fenster, Ph.D. I like it though there is alot of prep work to do especially if you like baking. She puts together some basic flour blends so I've replaced them with all of Bob's red mills flours. I have recently bought $300 worth of Bob's red mill gluten free flours, the biggest part of that order was the 25 lb bag of his GF all purpose flour blend which i love. He has a broad range of other flours to choose from so i picked other flavors i like such as, hazelnut flour and almond flour. I personal like the way potato starch comes out compared to corn starch; a good blend is arrowroot starch and potato starch for baked goods and for fried foods and gravy i use corn starch.

I will have more on the baking endeavors i have done coming soon i'm still working out the kinks.

Yesterday i make an oatmeal cookie that would make a great pie crust...opps.

Cheeseburger Spaghetti

  • 1 1/2 cup Brown Rice elbow pasta
  • garlic salt
  • 3-4 tbl Velveeta cheese
  • 1/4 cup milk
  • 1 tbl butter
  • 1/2 lb ground beef
  • season salt pepper
makes 2-3 servings




  1. Heat up your water in a pot and start your meat in a pan on low heat.
  2. Season meat with season salt and pepper.
  3. When water boils and you add the pasta also add in your garlic salt and a little bit of butter. Stir often to keep the noodles from cooking together. Time as directed on package.
  4. After noodles are done rinse and return to pot on low heat add your 1/4 cup Milk, 1 tbl butter and 3-4 tbl Velveeta or as much as you would like.
  5. When cheese starts to melt add your ground beef and stir until well mixed and Cheesy!.

Pumpernickel For the Bread Machine

Pumpernickel
For the Bread Machine

  • Wet Ingredients: Bring wet ingredients to room temperature and place at the bottom of the pan
1 1/3 cup whole Milk

¼ cup Grape Seed Oil
3 Tbl Honey
1 Tsp Apple Cider Vinegar
Grated zest from one Orange
2 eggs beaten
  •  Dry Ingredients: Whisk together in a bowl and place on top of wet ingredients.

2/3 cup Sorghum Flour
1/3 cup Cornmeal
½ cup Brown Rice Flour
2 Tsp Xanthium Gum
1 cup Potato Starch
1 ¼ Tsp salt
2 Tbl raw Sugar
1 ½ Tbl Unsweetened Cocoa powder
2 Tsp Caraway Seeds
Mortar and pestered
1 Tsp onion Powder
  • With your finger make an indentation in the middle of the dry ingredients and place yeast in the indentation.

2 1/4 Active Dry yeast  
  • Scrap sides of pan half way through mixing.

  • As soon as mixing cycle is done, with wet hands, take out paddle. Then form your loaf and with one egg white cover the top of the loaf and sprinkle with sesame seeds.

 Suggestions:
  • If the loaf is not done stick it in the oven at 350°f for 10-15 min or Convection toaster at 325°f for 10-15 min.
  • Depending on your bread Machine or if you want to bake it in the oven you are going to have to use your yeast differently. I suggest not using milk and using yeast as directed on the package with water.
  • The bread machine I use is the Cuisinart BMKR 200 series on the gluten free setting.
  • All the flours that I used were from Bob's Red Mill.

Cooking With Rice

Brown Rice Vs. White Rice
Brown rice is white rice that has not had the bran covering removed. White rice cooks faster. Brown rice has 3.5 grams more fiber then white which has less than one gram of fiber.
Taste wise I like white rice better with chicken, veggies, and seafood
Brown rice taste great with meats, BBQ, and potatoes


Here are all the ways I’ve used Rice:
Peanuts are great to throw in while cooking rice
Thawed Frozen Cooked shrimp ¾ way through cooking rice
Broccoli and rice
Brown rice vs. White rice
In a stew with veggies of your choice combine rice, ground beef, and cilantro into palm size meat balls for a meat ball soup.

About Me

I was diagnosed with Celiac Disease when I was 19 in 2004. At that time I was living on my own, going to college for music and massage therapy. I started having digestive issues at age 13 when I was in the 7th grade. All of a sudden eating cereal in the morning gave me diarrhea. Though it was never consistent as to what made me sick milk seemed to be a major factor or so it seemed. My parents didn’t take me to the doctor thinking since my mom had lactose issues so did I. I was 16 when my parents gave me some generic brand of lactose pills to help me out. They worked for three years until they just stopped when I was 19 and everything I ate made me sick. That’s when I took myself to the doctor to figure it out. He asked me a few questions like my trip to Australia and New Zealand and if I had pork there, he was thinking tapeworm. We talked about my stress levels and how I’ve been and about my eating history. I had a few stool tests and a few blood tests. My blood test came back and my doctor told me I was positive for celiac disease and he wanted me to see a nutritionist.

I never went to the nutritionist instead I picked up a book and studied Celiac Disease online and tried to figure out how to make it through college living with it. I used to work in three restaurants: Disneyland Hotel, Old Spaghetti Factory, Cheesecake Factory, and a Catering Company. Having 4 years of restaurant experience helped me to know the right questions to ask to see if I could eat something at a restaurant or not. Now that I’m older and have been living with Celiac Disease for 5 years I’ve started traveling a lot more. I’ve traveled from the West Coast to the Midwest and back a few times now eating/shopping at different grocery stores, fast food places, and restaurants along the way.

Rey's Mexican Hamburgers

Ingredients:

  • 1 lb ground beef
  • Paprika
  • Steak seasoning
  • Garlic salt
  • Pepper
  • 6 Corn tortillas
  • Oil
  • Lettuce
  • Shredded Cheese: cheddar or Monterey jack
  • Ketchup or diced tomatoes
  1. In a small frying pan put a thin layer of oil and heat up on medium heat until really hot, you don’t want steam. Keep an eye on your oil when heating and turn on the fan or open the window.
  2. With tongs lay corn tortilla flat in the pan, immediately fold so the side that was down is now the middle for your taco shell. Fry both sides until crispy and golden, try to keep your taco shell in a wide V shape otherwise you’re going to have a hard time filling it. Put in a pan and stick in the oven on the lowest setting to keep warm.
  3. On medium heat Put ground beef and seasoning in a large frying pan, break up, and stir until no longer pink. Drain the excess oil from the pan when done.
  4. Put it all together in the taco shell: meat, cheese, ketchup, and then lettuce.

Tips and Suggestions

  • I cook both of these steps at the same time so I don’t have to use the oven, but that is a lot of flipping and stirring so use the oven if you have to.
  • Corn oil is the best to use but any light oil works.
  • Use a spatula to put the meat in the taco
  • I sometimes put Pace Picante salsa in with the meat.

How I Lost Weight

At the early stages of my diagnosis I was still experimenting with the gluten free diet and having issues with dairy and peanuts. Even though I kept an active life style with marching band, dancing, hiking, walking around town, and being a waiter the whole time my weight went up and down. I was 155lbs before the gluten free diet and in three years I still gained 10 lbs, but I did look healthier.
By the time I graduated from massage therapy school I had a better knowledge about how the body functions. My only chose to losing weight was a dietary change even though I was already going through one. This one consisted of getting enough vitamins in me. I looked at vitamins in the store and found most of the time the other ingredients on the bottle was longer then the active ingredients. And there are so many vitamins for different parts of the body on different levels and don’t forget your minerals, what a headache.
